1 cup cornmeal
1/2 cup flour
1/6 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 egg
1 cup buttermilk
Preheat
oven to 450 degrees. Mix dry ingredients, add egg and buttermilk.
Heat skillet with oil. Add batter. Bake for 15-20 minutes or until
top is brown.
Mexican Cornbread: Use above batter. Stir whole kernel corn,
ground beef [browned], onion, jalapeno peppers, and cheese into
batter. Cook at 350-375 degrees for 30-45 minutes until done.
