Country Cookies
2 cups
shortening
2 cups sugar
2 cups firmly packed brown sugar
4 large eggs
2 teaspoons vanilla
3 cups flour
2 teaspoons baking soda
2 teaspoons salt
4 cups quick cook oats
2 cups shredded coconut
Cream shortening, sugar. Add eggs, vanilla, beat until
blended. Add flour and seasoning - beat completely. Work in
oats and coconut. Drop by 1 ½ tablespoons, 3 inches apart.
Bake at 350 degrees for 10-12 minutes.
