Dirty Rice
2 pounds lean
ground beef
2 pounds lean ground pork
1 pounds chicken giblets (ground)
1 cup yellow onions (diced)
1 cup diced shallots (green onion)
1/2 cup diced bell peppers
1/4 cup garlic (preferably ground)
1/4 cup parsley (cut up fine)
4 bay leaves
1 teaspoon black pepper
2 cans cream of mushroom soup
2 cups celery (cut up fine)
3 tablespoons Worcestershire sauce
1/2 pound margarine
Salt
With about 2 cups water, mix all meats together in a
heavy pot, on a medium hot burner. Add all the above
seasonings except mushroom soup at the start of cooking.
Cook medium temperature about 4 hours. Stir often. Then add
the cream of mushroom soup. Continue cooking for 30 minutes.
Boil 2 pounds long grain rice. Let rice cook completely.
After rice has cooked, mix with the meat ingredients
thoroughly. Allow to steam or cook on a low heat for
about 30 minutes before serving. Serves 10.
