Egg Foo Yung
4-5 eggs
1 can tuna
1 carrot, shredded
1 onion, chopped or 1/2 bunch green onions
1/4-1/2 cup water chestnuts, chopped
1 cup bean sprouts
1/2 teaspoon salt
Beat eggs lightly. Add rest of ingredients. Heat 2
tablespoons oil in frying pan. (More oil may be added as
needed.) When hot drop egg mixture by tablespoon in frying
pan. Brown and turn over. Cook over medium heat.
Sauce (opt)
1 1/2 cups water
1 chicken bouillon
1 tablespoon soy sauce
1/2 teaspoon sugar
Cornstarch to thicken
Combine all ingredients and bring to boil. Serve over
egg patties.
VARIATIONS: Ham, chicken, crabmeat, shrimp, or other similar
ingredients may be used.
