Green Bean Vinaigrette
6 ounces fresh
green beans
1 tablespoon balsamic or red wine vinegar
2 teaspoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon minced shallots
Steam beans 4 minutes (crisp tender). In small saucepan
on medium heat warm-up vinegar, oil, salt, and pepper until
hot. Stir in shallot and cook until soft (about 2 minutes).
In medium bowl toss beans with vinaigrette to coat. Serve
warm or room temperature.
